Nowadays, ageing wine seems like a natural thing to do with the usual suspects - top Bordeaux, Burgundy, Port and other fine wines. However, the history of ageing wine is an interesting one that has something of a hole in the middle of it. Aside from biblical references to the maturation of wine, the story really begins with the Romans.
