Grilled Mexican Street Corn with Jicama + Chile Salt - cool, crisp, summery and so simple with my fave trick for grilling corn in a snap.

Corn on the Cob Redefined  Ingredients: 4 ears of corn, in husk ½ teaspoon unsalted butter 2 tablespoons mayonnaise ½ cup cotija cheese (alternative: mild white cheese of your choice such as white cheddar) TAJÍN CLASICO to taste Instructions: Wrap corn while still in husk in aluminum foil. Place corn in the oven and broil or grill for 20-25 minutes, until cooked. Open foil and remove husk and continue to broil until lightly charred all over. Remove corn from oven and roll in melted butter.
